Tomato-Onion Soup

Ingredients

  • ½ Tbsp. olive oil
  • ½ Tbsp. butter
  • 1 onion, quartered and sliced thinly
  • 6 tomatoes, peeled and chopped
  • 1 clove garlic, minced
  • 6 cups water, or chicken stock
  • 1 bay leaf
  • 1 tsp. salt

Method

In a large pan, melt butter with olive oil. Sauté onions until tender and lightly browned, about 10 min.

Add the tomatoes & garlic, continue cooking another few minutes.

Add 6 C. water, bay leaf and salt. Bring to a boil. Cover and simmer for 30 min. or until flavors blend.
