Orange Zucchini Bread

Ingredients

  • 1 C. whole wheat flour
  • 1 t. baking powder
  • ½ t. baking soda
  • ½ t. salt
  • 1 t. cinnamon
  • ½ t. nutmeg
  • 1 ½ t. orange peel
  • ¼ C. brown sugar
  • ½ C. Splenda
  • ½ C. oil
  • 2 eggs
  • 1 t. vanilla
  • ½ C. oatmeal
  • 1 C. zucchini
  • ½ C. walnuts

Method

Mix together sugar, Splenda, eggs, oil, and vanilla.
Sift together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
Add to egg mixture along with orange peel and oatmeal.
Stir in zucchini and walnuts.

Spoon into a Pam sprayed bread pan.
Bake @ 375º for 20-25 minutes or until done. Check with a toothpick.
