Mediterranean Pasta Salad

Ingredients

  • 16 oz. rotini pasta, cooked; chilled
  • 3 Tbsp. olive oil
  • 8 oz. chicken breast
  • water, to cover chicken in 9x9 pan
  • 1 Tbsp. balsamic vinegar, (possibly more to taste)
  • ½ green pepper
  • ½ red bell pepper
  • ½ cup green olives, sliced
  • ½ cup black olives, sliced
  • 4 scallions
  • 1 Tbsp. worcestershire, (possibly more to taste)
  • 1 Tbsp. balsamic vinegar, (possibly more to taste)
  • ¼ cup mayonnaise, (this is a to taste recipe!)

Method

If chicken is not already cooked, place it into a 9x9 pan. Cover uncooked chicken with water and balsamic vinegar; bake covered at 350F until cooked throughout. Let chicken cool and mince; set aside.

Mix cooked pasta with olive oil and diced chicken.

Add green pepper, red pepper, green olives, black olives, sliced scallions, Worcestershire, balsamic vinegar, and mayonnaise to pasta. Mix thoroughly and season to taste. :)
