Bleu Cheese Pear Salad

Ingredients

  • ¼ cup sugar
  • ½ cup pecans
  • cup olive oil, or 1/2 water and 1/2 oil
  • 3 Tbsp. red wine vinegar
  • 1 ½ tsp. Splenda
  • 1 ½ tsp. mustard
  • 1 clove garlic
  • ½ tsp. salt
  • black pepper, to taste
  • 1 head lettuce
  • 3 pears, peeled and chopped
  • 5 ounces bleu cheese
  • 1 avacado, sliced
  • ½ cup green onions, sliced

Method

Add sugar and pecans to a medium skillet over medium-low heat. Stir constantly until pecans are caramelized. Cool on wax paper.

For the dressing, mix olive oil and next six ingredients (down to black pepper) together.

In large bowl layer lettuce, pears, blue cheese, avocado, green onions.

Pour dressing over all, sprinkle with pecans.
