Wioleta's Leftovers Summer Soup

Ingredients

  • Add to soup pot:
    • 6 cans chicken broth
    • 1 leek, chopped; white & a bit of green only
    • 2 small parsnips, diced
    • 3 potatoes, diced
    • 2 stalks celery, chopped
    • 3 small tomatoes, diced
    • 3 cloves garlic, minced
    • 3 pinches parsley
    • 2 bay leaves
    • 8 whole cloves
    • rosemary
    • sage
    • thyme
    • basil
  • In a skillet brown:
    • 16 ounces Polish sausage, cut into pieces
  • Add sausage to soup pot, but in pan, sauté:
    • 2 medium onions, chopped
    • 6 ounces fresh mushrooms, sliced
    • ½ green bell pepper, chopped
    • ½ red bell pepper, chopped
  • Add to soup and simmer 2 hours.
