Turkey Chili with Black Beans and Corn

Serves 8 (2 cup servings)
You won’t miss the high fat beef in this hearty, well-seasoned dish, which relies on extra lean ground turkey and black beans for its thick, crowd-pleasing consistency. Plus, you’ll receive a healthy dose of fiber, folic acid, magnesium and manganese (top with nonfat cheese and you’ll benefit from calcium as well!). Freeze leftovers in a tightly covered container or store in the fridge for up to 3 days.

Ingredients

  • 2 # ground turkey breast, extra lean
  • 2 t. garlic powder
  • 1 t. paprika
  • 1 t. black pepper
  • 1 t. cumin
  • 1 t. oregano
  • 6 t. chili powder
  • 2 large onions, coarsely chopped
  • ½ t. ground red pepper
  • 2 t. flour
  • 2 cans (28 oz.) crushed tomatoes
  • 2 cans (15 oz.) black beans, drained and rinsed
  • 1 can (15 oz.) corn, drained and rinsed
  • 2 C. water

Method

Brown ground turkey in a skillet, drain fat.

Add crushed tomatoes, water and spices.
Cover skillet, simmer 25-30 minutes, stirring every 10 minutes.

Uncover skillet, add flour, mix well.
Add black beans and corn, mix well.
Simmer uncovered about 20 minutes.
