Shrimp Boil

Hopefully you will be able to serve the shrimp before the rest of the dinner is gone!

Ingredients

  • 2 # shrimp, med. size
  • 3-4 potatoes, chunks
  • 2 # smoked sausage, cut into pieces
  • 1 ½ packages frozen corn , (or corn on the cob)
  • 2 medium onions, chunks
  • 1 t. freshly ground black pepper
  • 1 t. ground mustard
  • 1 t. ground coriander
  • 3 bay leaves
  • 1 small piece of fresh ginger
  • 1 t. cayenne pepper
  • salt, to taste

Method

Put a little olive oil in a large soup pot and brown sausage.
Add all ingredients, except the shrimp.
Fill the pot half way with water.
Bring to a boil, simmer, until potatoes are cooked.
Remove the bay leaves and piece of ginger.
Using a colander, strain the boil.
Put the potatoes-sausage mixture on a plate and serve with Dijon mustard.
Return the broth to the pot and bring to a boil.
Add shrimp, cook 2-5 minutes until shrimp are cooked; do not overcook.
Remove the shrimp and serve with cocktail sauce.
