Peel potatoes, drop into cold water to prevent discoloring.
In large bowl, combine eggs & onions. Gradually beat in oatmeal & salt.
Pat potatoes dry & grate into a sieve. Wring potatoes in cheesecloth draining as much water as possible. Immediately stir into egg mixture.
Melt ½ C oil over high heat. Pour in 1/3 cup potato mixture. Flatten to make pancake 5” in diameter. Fry over moderate heat for 2 min on each side. When golden & crisp, transfer to a plate & put into a warm over.
