Pear Gingerbread Upside-down Cake

Ingredients

  • 1 Tbsp. butter, melted
  • ¼ cup whole wheat flour
  • ¼ cup flour
  • 2 tsp. ginger
  • 1 ½ tsp. cinnamon
  • 1 tsp. baking powder
  • ¼ tsp. baking soda
  • ¼ tsp. salt
  • 1 egg
  • cup sugar
  • cup molasses
  • cup applesauce
  • cup plain yogurt
  • ¼ cup oil
  • Mix Together
    • ¼ cup brown sugar
    • ¼ cup walnuts
    • 3 pears, thinly sliced

Method

Preheat oven to 350º.

Brush cast iron skillet or 8x8” pan with melted butter.
Beat eggs, sugar & molasses for 3 min. Add applesauce & oil.

In a separate bowl, mix dry ingredients. Fold in flour mixture & yogurt.

Press brown sugar mixture on bottom of pan. Sprinkle with nuts. Arrange pears on walnuts. Pour batter on pears.

Bake @ 350º for 40 min.
