Peanut Butter-Oatmeal Cookies

Ingredients

  • ¾ C. shortening, part butter
  • ½ C. peanut butter
  • ¾ C. brown sugar
  • ½ C. honey, or part Splenda
  • 2 eggs
  • 1 C. flour
  • ½ C. whole wheat flour
  • ½ t. baking soda
  • ½ t. salt
  • 2 C. oatmeal
  • 1 C. raisins, add chocolate chips or nuts, as desired

Method

Cream shortening and peanut butter.
Add sugar and honey.
Beat in eggs.
Add dry ingredients, sifting in soda and salt.
Add the oatmeal and raisins, chips & nuts, as desired.
If too stiff, add a little milk to mixture.
Drop by spoonfuls on cookie sheet.
Flatten out.
Bake @ 350º for 10 minutes or until golden brown.
