Place cereal, dates and pecans in a food processor pulse until finely blended. Add honey, cream cheese & flavoring, pulse until a stiff dough forms.
Scoop tablespoon-size portions & shape with greased hands into balls. Roll each ball in chopped nuts.
Place on wax paper. Let stand at room temperature for 30 min. before serving or storing.
MAKE AHEAD TIP: Store in an airtight container, separating balls with layers of wax paper.
Refrigerate for up to 5 days.
Chopped nuts can be substituted with either date sugar, coconut or toasted wheat germ. Yum.
