Chicken Capri

Ingredients

  • 1 cup ricotta cheese, reduced-fat
  • 1 tsp. oregano, dried
  • 1 tsp. garlic powder
  • ¼ tsp. salt
  • ¼ tsp. black pepper
  • 4 half chicken breast, boneless, skinless
  • 2 Tbsp. olive oil
  • 1 cup crushed tomatoes
  • 4 ounces mozarella cheese, reduced-fat

Method

Mix ricotta, oregano, garlic, salt and pepper together.

Rub chicken with garlic powder. Heat the oil in a large skillet over medium-high heat. Add the chicken and cook about 6 minutes per side. Place chicken breasts in large baking dish; cool.

Top each breast with 1/4 cup of cheese mixture and 1/4 cup tomatoes. Add 1 slice of mozzarella to each.

Bake at 350°F for 20 minutes.
