Cauliflower Mashed Potatoes

Makes 4 servings, 3/4 cup each
Whether you’re watching your carbs or trying to lose weight, or if you simply love hot, creamy comfort food, this recipe is calling your name. It’s very popular among my clients (and staff!) and one serving provides only 78 calories and 9 grams of carbs.

Ingredients

  • 1 head cauliflower, cut into florets, similar size
  • ¾ C. chicken broth, low-sodium, low-fat
  • 1 T. cornstarch
  • 4 oz. cream cheese, fat-free
  • 2 T. Parmesan cheese, grated
  • ½ t. garlic powder
  • ¼ t. onion powder
  • ¼ t. paprika
  • ground pepper

Method

Steam the cauliflower over boiling water for 15-20 minutes, until tender.
Drain, put into a food processor with 1/2 C. beef broth. Puree until smooth.
Transfer to a medium saucepan.

In a cup, dissolve cornstarch in remaining 1/4 C. broth. Add to cauliflower.
Add the cream cheese, Parmesan, garlic & onion powder and paprika.
Cook over medium heat, stirring 2-3 minutes, until it begins to thicken.
Season with salt & pepper, as desired.

Serve immediately.
