Basil Roasted Tomaotes

Makes a great dinner with Shrimp Scampi, Lemon Fettuccine and Grilled Broccoli.

Ingredients

  • 2 tomatoes, sliced thick
  • ¼ C. Italian bread crumbs
  • 1 T. Parmesan cheese
  • 1 t. basil
  • olive oil

Method

Cut tomatoes into thick slices and place on a foil-lined cookie sheet.
Mix basil and Parmesan cheese in bread crumbs.
If using plain bread crumbs, add garlic powder and Italian seasoning.
Sprinkle seasoned crumbs over tomatoes.
Drizzle with olive oil.
Bake @ 350º for 10-20.
