White Bean Chili - Creamy Style

Ingredients

  • Olive oil
  • 1 onion, chopped
  • 1 clove garlic, chopped
  • 2 cups garbanzo beans, canned
  • 4 cups Great Northern beans, canned
  • 14 oz. chicken broth, canned
  • 2 cups corn, canned
  • 1 can green chilies
  • 1 teaspoon cumin
  • ¼ teaspoon pepper
  • 1 cup fat-free sour cream
  • ½ cup fat-free half-and-half

Method

Heat olive oil in a dutch oven and sauté onions & garlic until fragrant.
Add beans, broth, corn, chilies, spices.
Bring to a boil & simmer 30 min, uncovered.

Remove from heat and stir in sour cream & half & half.
