In a large skillet cook sausage in a bit of olive oil, 3-5 minutes.
Slide to one side of skillet.
Add the sweet potato, and 3/4 of the onion & spices. Cook 10-12 minutes, until potatoes are tender.
While the hash is cooking make the salsa (see Note)
Cook until potatoes are tender & remove to a serving plate.
Add grated cheese & cover with foil.
Wipe out the skillet with a paper towel.
Fry or scramble the eggs.
Put eggs on top of the hash & top with salsa.
Salsa:
3 tomatoes, chopped
1 small jalapeno, chopped
chopped onion
2-3 T. fresh cilantro, chopped
juice of 1 lime
