Sopa de Frijoles Negros al Estilo Cubano

Cuban Black Bean Soup

Ingredients

  • In a food processor add:
    • ½ green pepper
    • ½ tomato
    • ½ small onion
    • ½ jalapeno pepper
    • 3 cloves garlic, minced
    • 2 Tbsp. cilantro
    • salt, to taste
  • In a saucepan add:
    • 15 ounces black beans, (1 can)
    • 14 ounces chicken broth, (1 can)
    • 2 ounces tomato paste, (1/2 can)
    • 2 Tbsp. pimento-stuffed olives, chopped
    • salt
    • ground black pepper
    • cayenne pepper
  • Optional Toppings
    • white rice, cooked
    • onion, chopped
    • cilantro, chopped
    • sour cream

Method

Bring everything to a boil over medium heat. Skim off any foam that rises to the surface. Remove from heat.

Wait 5 to 10 min. for beans to soak up more of the liquid.

Serve hot, ladled into warm bowls.
