Salmon Roll-Ups

Ingredients

  • 1 ½ # salmon, skin removed
  • 6 oz. feta cheese, crumbled
  • 10 oz. frozen spinach, defrosted, squeeze excess water
  • 3 or 4 slices roasted red pepper, chopped

Method

Combine feta cheese, spinach & roasted red pepper, mix well.
Spread mixture over the salmon.
Roll up salmon & then slice it about ¾ inch thick.
Place in a baking dish & cover with foil.
Bake @ 400º for 10-15 min, until salmon is done.

Notes

Roll-ups can be frozen. Defrost and bake.
