Salmon-Stuffed Fillet Roll-Ups

Ingredients

  • 24 ounces salmon, filleted
  • 6 ounces feta cheese, crumbled
  • 10 ounces frozen spinach, thawed (squeeze out excess water & chop)
  • 1 red bell pepper, roasted; chopped

Method

Combine: Feta cheese, spinach & roasted red pepper, mix well.

Spread mixture over the salmon. Roll up salmon & then slice it about ¾ inch thick. Place in a baking dish & cover with foil.

Bake @ 400º for 10-15 min, until salmon is done.

Roll-ups can be frozen. Defrost and bake.
