Pancakes-Light & Fluffy

Ingredients

  • 1 C. milk or buttermilk, if using buttermilk, use 1 1/2 t. baking powder and 1/2 t. soda
  • 2 T. vegetable oil
  • 1 egg
  • 1 C. flour
  • ½ t. salt
  • 2 T. sugar
  • 2 t. baking powder

Method

Combine milk, oil and egg.
Combine dry ingredients and stir in milk mixture.
Stir to make a smooth batter.
Grease griddle, if necessary.
Cook pancaked over low heat.

Makes 9 4" pancakes.
