Lemon Jello Cake

This is one of Bob's favorites.

Ingredients

  • 1 (small) pkg. sugar-free lemon jello
  • ½ C. boiling water
  • 1 pkg. yellow cake mix
  • ¾ C. vegetable oil
  • 4 eggs
  • 1 t. lemon extract
  • pinch of salt
  • 2 lemons, juiced
  • 1 ¼ C. powdered sugar

Method

Dissolve lemon jello in 1/2 C. boiling water.
Combine cake mix, oil, eggs, jello mixture, lemon extract & salt in a large.
Pour into a greased & floured angel food cake (tube) pan.
Bake @ 350º for 45 minutes.

Mix powdered sugar and juice from the lemons together.
Poke holes in the hot cake and drizzle with lemon glaze.
Cool, briefly and remove from pan to serving plate.

Notes

Watch out for dogs!! While out camping one year Bonnie & Clyde enjoyed Sam's and Bob's birthday cake !!
