German Apple Pancakes

Ingredients

  • Melt in iron skillet:
    • ¼ cup butter
    • 2 Tbsp. Splenda
    • ½ tsp. cinnamon
    • 3 cups apples, sliced
  • Beat together, then pour over apples:
    • 3 eggs
    • ½ cup apple juice
    • ½ cup half-and-half
    • 1 tsp. vanilla
    • 1 tsp. cinnamon
    • ¼ tsp. nutmeg
  • Apple Cream:
    • ½ cup plain yogurt, (or sub vanilla yogurt)
    • ½ tsp. vanilla, (if using vanilla yogurt, omit)
    • 2 Tbsp. apple juice

Method

Bake @ 450º about 10 min until set in the middle.

Cut into 8 wedges & serve with apple cream.
