Forgotten Cookies

I don't think Sam will ever forget the swans at Margaret Pettingill's house. I still remember getting Easter gifts from her and the radiators in her house.

Ingredients

  • 2 egg whites
  • ¾ cups sugar
  • 2 drops peppermint extract
  • green food coloring, optional
  • 6 oz. mini-chocolate chips

Method

Heat oven to 325º F.

Beat egg whites until frothy, add sugar 1 T at a time until stiff.
Add flavoring & food coloring. 1 pkg (6 oz) mini-chocolate chips.

Drop by teaspoon on foil covered cookie sheet. Put into oven & turn oven off. Leave in oven overnight.

DO NOT OPEN DOOR! 
