Cornmeal and Parmesan Chicken Strips

Ingredients

  • ¼ cup parmesan cheese
  • 1 chicken breast
  • ¼ cup cornmeal
  • ½ tsp. garlic powder
  • ½ tsp. onion powder
  • 1 tsp. paprika
  • Dash cayenne pepper
  • salt, to taste
  • 1 egg
  • 2 Tbsp. milk

Method

Preheat oven to 425ºF.

Combine parmesan, cornmeal and spices in a plastic bag.

Beat egg and milk. Add chicken to egg/milk mixture.

Put chicken in cornmeal mixture, shake to coat. Place chicken on a Pam sprayed cookie sheet. Spray Pam over top of chicken pieces.

Bake @ 425º for 10 min, turn pieces & bake 5 min. longer.
